The processed chicken nuggets that are widely available in the market are often associated with high fat and excessive sodium content, and they are often added with artificial additives, which can have adverse effects on consumers' health. With the increasing demand of plant-based products, consumers are actively seeking healthier and more nutritious plant-based nugget options. Therefore, a rice-based nugget was innovated that utilizes the indigenous ingredients of Sabah as Tadong rice and local herbs Losun (Allium chinese) and bunga kantan (Etlingera elatior) that is rich in flavor and health benefits. The innovated product mimics the compactness of chicken meat, have a juicy, elastic, stretchy and chewy texture offering a meat-like quality. This product contributes for regional production of local ingredients that may strengthen the rural economies and promotes biodiversity by valuing underutilized indigenous crops. Also it offers health benefits to consumer and align with SDG2, SDG3 and SDG12. The local rice-based nugge has higher potential to be commercialized as an alternative to conventional chicken nugget. This product support the sustainable production and leveraging local ingredients that may promotes Sabahan cultural.
