Bouillon cube is one of the drying foods for preservative to make it longer shelf life. It is made from dehydrated meat or vegetable broth, bouillon cubes are essentially evaporated, condensed bouillon in the shape of a cube that, when added to water, makes broth. The part of plant used to make bouillon cube is coconut milk from coconut fruit. This study aims develop the bouillon cube stock by using different types of binders. Coconut milk were spray dried before proceeding to the designated formulation with three different types of binders namely maltodextrin, Microcrystalline Cellulose (MCM) and Carboxymethyl Cellulose (CMC). There were three types of analysis were conducted: hardness, moisture content and solubility. These analyses were analysed, and maltodextrin shows the best results compared the other two. This study showed that coconut milk able to be developed in the new types of products and be commercial in a good way. There is a bright potential of this coconut milk bouillon cube stock to be commercialized in the future.
